Components Of Tomato & Pickled Purple Onion Salad
1 1/3 pounds small to medium red tomatoes, halved or quartered if tiny, and halves or quarters of a large red tomato
1 medium red onion, cut into sections of 1/4-inch-thick slices
2 tablespoons fresh flat-leaf parsley, freshly chopped
1 teaspoon salt, coarse
Freshly ground pepper
2-3 tbsp. canola oil
In a large mixing basin, gently toss tomatoes, onion, parsley, and salt.
Season with pepper.
Toss in the oil and toss to mix.
Allow for a 5-10 minute rest period before serving.
Make sure you select the type of onion that doesn’t have any discoloration and are massive.
